1 albacore steak about 1 1/2" thick and 8 inches in diameter
8 ounce bottle of BBQ sauce
1 cup beer
4 strips ranch style bacon (thick slice)
Cook bacon about 2/3 done. Divide steak into 4 fillets and wrap bacon strips around and pin.
Mix BBQ sauce with beer. Marinate steaks overnight (if wanted) or at least several hours. Cook over hot coals for 3 to 4 minutes or until done (don't overcook) Baste the steaks heavily while they cool. Serve over a bed of rice with a fruit salad.
3 tab. lime juice
2 tab. vegetable oil
2 tab. honey
2 tab. soy sauce
1/4 tsp. ginger
1/4 tsp. cinnamon
