Herbed Tuna Steak with Black Bean Confetti Relish (for one)
1 T minced shallots
1 T lemon juice
1/4 tsp coarsely ground black pepper
1/8 tsp dried tarragon
1/8 tsp dried oregano
1 (6 oz) tuna steak 3/4 inch thick
cooking spray
Black Bean Confetti Relish
Combine first 6 ingredients in a small dish; cover and marinate tuna in refridgerator for 30 minutes.
Prepare Grill
or Broiler.
Place fish on grill rack or broiler pan coated with cooking spray. Cook 2 minutes on each side until fish is done.
Serve with Black Bean Confetti Relish.
Black Bean Confetti Relish
2/3 cup canned black beans, rinsed and drained
2 T frozen whole kernel corn
2 T diced yellow bell pepper
2 T diced plum tomato
1 T minced shallots
1 T lemon juice
1 tsp olive oil
1/4 tsp ground cumin
1/4 tsp coarsely ground black pepper
1/8 tsp salt
Combine all ingredients in a bowl. Serve chilled or at room temperature. This can be served with chips also.
