Tuna: Tuna Cheese Melt

Tuna Cheese Melt
(Makes 4 servings)

2 (6 oz) cans water-packed tuna, drained and flaked
1/4 cup each chopped celery and onion
1 1/2 cups (6 oz) Finely Shredded Mild Cheddar Cheese
1/4 cup mayonnaise
1/8 teaspoon pepper
4 English muffins, split and lightly toasted

Combine tuna, celery, onion, 1 cup cheese, mayonnaise and pepper; mix well. Top each muffin half with one-eighth tuna mixture. Place on cookie sheet. Sprinkle with remaining cheese. Broil 2 minutes or until tuna mixture is hot.

Prep. time: 10 minutes
Cook time: 5 minutes
