Apple Bread Pudding

4 cups soft bread cubes, cut into 1/2 inch cubes
2 1/2 - 3 cups peeled and thinly sliced apples
1 cup dark brown sugar
1 3/4 cups milk
1 tsp cinnamon
1/2 tsp vanilla extract
1 Tbsp bourbon (optional)
2 eggs, beaten
1/4 cup chopped pecans, toasted
A touch of nutmeg
1/4 cup unsalted butter


Preheat oven to 350 F (325 F for dark pans). Grease an 8x8 pan.

In large bowl, combine bread, apples, and pecans. In small saucepan, combine brown sugar, milk, and butter. Cook over medium heat, stirring until butter's melted. Pour over bread mixture.

In small bowl, combine cinnamon, vanilla, bourbon, nutmeg, and eggs. Pour bread mixture into prepared baking pan and pour egg mixture on top.

Bake in middle of preheated oven around 40 minutes, until center is set and apples are tender.
