Apple Relish
4 medium tart apples, peeled and chopped
2 cups sugar
1 cup chopped dried apricots
1 cup golden raisins
1/4 cup vinegar
2 Tbsp. grated orange peel
1/2 cup slivered almonds, toasted
In a large saucepan, combine the first six ingredients. Bring to a boil, stirring constantly. Reduce heat; simmer for 25-30 minutes or until thickened. Stir in almonds.
Yield: 4 cups relish.
Note: This goes well with cloved ham, pork, chicken and turkey.
