Apple Breakfast Cake
4 cups peeled, diced apples
2 cups sugar
1 cup chopped nuts
1/2 teaspoon nutmeg
1 teaspoon cinnamon
2 teaspoons baking soda
3 cups all-purpose flour
1/2 teaspoon salt
1 cup cooking oil
1 teaspoon vanilla extract
2 eggs, well beaten
Mix together apples, sugar, and nuts in a mixing bowl; let stand for 1 hour, stirring often.
Preheat oven to 350.
Grease and flour a tube pan.
Add dry ingredients to apples, mixing well.
Add oil, vanilla, and eggs; mix well.
Pour batter into prepared pan and bake for 1 hour.
This cake may be served as dessert after a full breakfast or as part of a continental breakfast.
