Apple Cake With Lemon Frosting

Apple Cake w Lemon Sauce

2 cups sugar
1 cup butter or margarine, softened
4 eggs
2 teaspoons vanilla
2 cups all purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
4 cups diced peeled apples
1 cup packed brown sugar
1 tablespoon ground cinnamon
1/2 teaspoon ground nutmeg
Lemon sauce follows


In mixing bowl, beat together sugar, butter, eggs and vanilla with electric mixer til well combined. Add flour, baking powder and 1/2 teaspoon salt. Beat til just combined. Spread half of batter into greased 13 x 9 x 2 inch baking pan.

In another bowl, stir together the apples, brown sugar, cinnamon and nutmeg. Spread the mixture over the cake batter. Dollop the remaining batter over the apples.

Bake cake in 350 degree oven for about 60 minutes or til toothpick inserted in center comes out clean. Cool in pan for 30 minutes.

Prepare lemon sauce as directed. Serve warm squares of cake topped with the warm sauce. Makes 12 servings.


Lemon Sauce:
In medium saucepan, combine 1 cup sugar, 3 tablespoons cornstarch, 1/4 teaspoon ground nutmeg and 1/4 teaspoon salt. Stir in 2 1/2 cups water. Cook and stir til mixture is thickened and bubbly. Cook and stir for 2 minutes. Stir in 6 tablespoons butter, 1 teaspoon grated lemon peel and 1/4 cup lemon juice. Serve the sauce warm over cake. Makes 3 1/2 cups sauce.
