Candy Apples

8 wooden skewers or popsicle sticks
8 small sweet apples, washed and dried
1 cp water
3 cp sugar
1/2 cp light corn syrup
1/4 cp red-hot candies
1/2 tsp red food color


Insery a wooden skewer in to the stem end of each apple. Grease a large cookie sheet and set aside.

In a large (2 qt) saucepan, combine the remaining ingredients and heat to boiling over medium heat without stirring. Continue to boil without stirring, until a small amount of mixture separates into thin hard threads when dropped into cold water (290 degrees on a candy thermometer), approx 20 min. Occasionally brush the sugar from the side of the pan, while the mixture cooks,

When threads form in cold water, remove pan from heat. Tip pan and, holding an apple by the wooden skewer, dip and apple into the mixture and swirl to coat completely. Lift the apple out of the mixture and twist it over the saucepan a few more seconds to allow most drips to fall back into the mixture.

Place the dipped apple on cookie sheet to cool. Repeat procedure with remaining 7 apples, working quickly so syrup doesn't harden in the pan. If necessary, return pan to stove and soften over very low heat. Cool at least 1 hour before serving.
