2 cups apple juice
2 cinnamon sticks (3-inches each)
1 teaspoon anise seed
3 1/2 cups sugar
1 pouch liquid pectin

Prepare and sterilize canning jars and lids according to manufacturers instructions.

Measure apple juice into a large saucepan. Tie cinnamon sticks and anise seed in a cheesecloth bag, add to apple juice. Simmer juice and spices for 10 minutes. Add sugar, stirring to dissolve. Bring mixture to a full rolling boil. Stir in pectin, return mixture to a full rolling boil. Boil hard for 1 minute. Remove from heat. Discard spices and skim foam if necessary.

Carefully ladle hot mixture into hot jars, leaving 1/4-inch headspace. Adjust caps. Invert jars for a few seconds; stand upright to cool.

Yields: 3 (8-oz.) jars
