Crystal Glazed Apple Fritter

Tempura Batter:
2 eggs
3/4 cup water
1/4 cup oil
1 cup flour
1/4 cup cornstarch
1 Tbl. Sugar, white

Fritters:
2 large Granny Smith Apples, peeled and cut into bite sized nuggets
3/4 cup sugar plus 1 Tbl. Sugar, divided
1 tsp. cinnamon
1/4 cup water
2 Tbl. oil
5 Tbl. cornstarch, divided
1 tsp. toasted sesame seeds
Canola oil for frying


Mix batter ingredients until smooth; set aside

Fritters: Heat oil to 375 or until med. hot. Peel, core and cut apples into bite size nuggets. Put in cold water with a little lemon juice to keep from turning brown. After making batter drain and toss with 1 Tbl. sugar and 1 sp. cinnamon and mix well.

Coat apples lightly with cornstarch. Dip in batter and fry until lightly browned. Remove and let cool for 10 minutes and then return to oil to crisp and turn a golden brown. Remove and drain well.

Syrup: In a small bowl combine sugar and water. Mix well. Put 2 Tbl. oil in medium stainless steel saucepan. Over medium high heat stir in sugar water mixture and when mixture begins to dissolve turn to low heat. Stir and cook mixture for 8 to 10 minutes til it turns to clear syrup.

Quickly add syrup to apple fritters and mix well. Toss with toasted sesame seeds and serve hot or cold. If you want to thicken syrup slightly before pouring over apple fritters put bottom of pan on bowl of ice for two seconds at a time and stir. It crystalizes quickly so don't dawdle on the ice.

To make the way they are supposed to be made,make fritters and then syrup. Get a bowl of ice cold water with ice cubes in it. It must be ice cold. Dip fritter in syrup and quicky dip into ice water. Just dip in and out quickly. It will crystalize very quickly and it won't get soggy. Drain and serve.
