Curried Apple Soup

1/4 c dried sherry or apple juice
1 large onion, chopped
1 ts minced garlic
3 large Red Delicious apples, peeled, cored and sliced
3 large Granny Smith apples, peeled, cored and sliced
Juice of 1/2 lemon
3/4 t curry powder, or to taste
4 c defatted chicken stock
1/2 c nonfat evaporated milk or low-fat buttermilk
salt, pepper
2 c herbed croutons


Bring sherry to boil in large Dutch oven set over medium-high heat. Add onions and garlic and cook, stirring frequently, 1 minute. Add apples, lemon juice and curry powder and cook 5 minutes, stirring occasionally. Add stock and cook until apples are very tender, about 25 minutes.

Puree soup in batches in blender and return to pot. Add evaporated milk and heat through, but do not boil. Season to taste with salt and pepper. Garnish each serving with croutons.
