Apple Dapple
Cake:
2 cups sugar
3 eggs
1 teaspoon baking soda
1 teaspoon salt
2 cups chopped pecans
1 tablespoon cinnamon
1 1/2 cups cooking oil
3 cups unsifted all-purpose flour
3 cups diced apples
2 teaspoons vanilla
Preheat oven to 325.
Combine sugar and oil and beat well.
Add eggs one at a time.
Sift dry ingredients together and stir into egg mixture.
Beat in apples and nuts.
Bake for 1 hour.
Glaze:
1 cup dark brown sugar
1/4 pound butter
1/2 cup heavy cream
Combine all ingredients and boil for 3 minutes.
Pour all but 1/3 over hot cake. Let cake cool and remove from pan.
Pour rest of glaze over cake.
