Dutch Apple Cake
from To Market, To Market... A Collection of Kentucky Recipes

2 eggs
1 cup sugar
1 cup brown sugar
1-1/2 cups vegetable oil
3 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon salt
3 cups chopped apples
1 cup chopped nuts
1 teaspoon vanilla

1/2 cup brown sugar
2 tablespoons margarine
2 tablespoons milk

To prepare cake: Beat eggs; add sugars and oil. Sift together flour, baking soda, cinnamon, and salt. Add slowly to creamed mixture. Add apples, nuts, and vanilla. Bake in greased tube pan. Temperature: 350 degrees Time: 1 hour

To prepare Glaze: Mix together brown sugar, margarine, and milk and heat to boiling. Boil 2 to 3 minutes over medium heat. Spread over warm cake.

YIELD: 16 servings
