Apple Fritters

1 c. sifted flour
2 Tbsp. sugar
1 1/2 tsp. baking powder
1/4 tsp. salt
1 egg, well beaten
1/2 c. milk
4 medium apples, pared and cut into 1/8-inch wedges
Vegetable oil for frying
Confectioners sugar


Sift flour with sugar, baking powder and salt. Blend egg and milk and stir into dry ingredients until smooth and well mixed. Add apples.

Meanwhile heat 1/2 to 3/4 inch of fat to 375 degrees. Drop in batter by teaspoonful, making sure you have at least 2 pieces of apple in each spoonful. Do not crowd pan. Fry in batches to a golden brown on one side, then turn and brown second side. Remove from fat and drain on absorbent paper. Sprinkle immediately with confectioners sugar, and serve hot.
