Hanna’s Apple Cake
7 tbsp butter
1/2 c sugar
1/2 c ground almonds (4 1/2 oz)
juice of 1 lemon
grated peel of 1/3 lemon
2 egg yolks
3 egg whites, stiffly beaten
1 1/2 c thick applesauce
Preheat to 350° F. and butter a 1 1/2 quart baking dish.
Cream butter and sugar together until light and fluffy.
Add almonds, lemon juice, and lemon peel, then beat.
Add egg yolks one at a time, beating well after each.
Add stiffly beaten egg whites.
Pour applesauce into baking dish, then pour batter on top.
Bake at 350 for about 20 minutes or until top is delicately browned.
Serve warm or cold, with cream.
