Harvest Apple Coffee Cake

3 medium apples (about 1 pound)
1 1/2 cups sugar (divided)
1 cup whole-wheat pastry flour
1 1/2 teaspoons ground cinnamon
2 cups all purpose flour
1 teaspoon baking powder
6 egg whites
1 cup unsweetened applesauce
1 teaspoon vanilla
1/2 cup chopped walnuts
1 cup raisins
powdered sugar (optional)


Preheat oven to 350º. Spray a 10" no-stick tube pan with no-stick spray and set aside. Peel, core, and finely chop apples. Set aside.

In a large bowl, stir together all-purpose flour, whole wheat flour, 1 cup of sugar, cinnamon and baking powder.

In another large bowl, beat egg whites with clean, dry beaters until soft peaks form. Slowly beat in remaining 1/2 cup of sugar. Slowly beat in applesauce and vanilla. Then slowly beat in about one-quarter of flour mixture. Fold egg white mixture into remaining flour mixture. Then fold in apples, walnuts and raisins. Pour batter into prepared tube pan.

Bake about 1 hour or until a toothpick inserted in center comes out clean. Cool cake in pan for 10 minutes. Then invert cake onto a serving platter and remove pan. Cool slightly. If desired, lightly sift powdered sugar over top. Serve warm.
