Maine Apple Stew

8-10 each Maine apples of any cooking variety
4 each sticks of cinnamon, 3 long
To taste sugar or Maine maple syrup
As needed water

Wash the apples, peel and cut into thick slices or chunks. Place in saucepan, add the cinnamon sticks, and then almost cover with cold water. Cook over low to medium heat, stir occasionally to prevent sticking. Cook until soft. Remove from heat, add sweetener of choice. Serve hot or cooled.
