Canned Apple Pie Filling
4 1/2 c. sugar
1 c. cornstarch
6 t. cinnamon
1 t. nutmeg
1/2 t. cloves (optional)
1 t. salt
3 T. lemon juice
5 1/2 - 6 lbs. apples
10 c. water
Blend sugar, cornstarch, cinnamon, nutmeg and salt in large pan. Stir in 8 cups water. Cook and stir until bubbly and thick.
Add lemon juice. Fill jars with pared and sliced apples. Fill with hot syrup to 1/2" from top.
Process quarts 20 minutes in hot water bath.
