Pork and Irish Apple Stew

6 shoulder pork chops
4 sour apples -- medium-size
3 onions
1 1/2 Tbsp. brown sugar
salt and black pepper
1 Tbsp. water


Trim chops of excess fat and cut fat in thin strips. Peel, core, and slice the apples. Slice onions thinly.

In a wide casserole put a layer of sliced onions, a layer of apples, 1/2 the brown sugar, the chops, salt, a generous grinding of pepper and the water. Cover chops with a layer of onions and a layer of apples. Toss the pork fat with remaining half of brown sugar. Lay on top of apples and salt and pepper. Cover casserole and cook in 350° F. (180° C) oven for 1 hour. Reduce heat and cook another hour.
