Pork and Irish Apple Stew

6 shoulder pork chops
4 sour apples -- medium-size
3 onions
1 1/2 Tbsp. brown sugar
salt and black pepper
1 Tbsp. water


Trim chops of excess fat and cut fat in thin strips. Peel, core, and slice the apples. Slice onions thinly.

In a wide casserole put a layer of sliced onions, a layer of apples, 1/2 the brown sugar, the chops, salt, a generous grinding of pepper and the water. Cover chops with a layer of onions and a layer of apples. Toss the pork fat with remaining half of brown sugar. Lay on top of apples and salt and pepper. Cover casserole and cook in 350 F. (180 C) oven for 1 hour. Reduce heat and cook another hour.
