Quick Pork and Apple Kraut
1 pound thinly sliced pork tenderloin
3 Tablespoons butter, divided
2 tart apples, pared, thinly sliced
1 pound sauerkraut
2/3 cup dry white wine
2 Tablespoons brown sugar
Salt, white pepper to taste
In large skillet, brown pork slices in 2 tbsp. butter When both sides are browned, add apple slices. Sauté 5 min., stirring occasionally to cook apples evenly.
Rinse sauerkraut well by placing in colander and running cold water over it. Drain well. Add drained kraut to skillet, stirring to blend. Stir in white wine. Simmer, covered for 10 minutes. Remove cover, stir in brown sugar and remaining butter. Taste and add salt, if necessary, and pepper. Simmer, uncovered, 5 minutes longer.
