Wild Rice Waldorf Salad

2 cups cooked wild rice, about 1/2 cup uncooked (this is not the wild rice and white rice mix that comes in a box with seasonings)
2 large apples--the recipe recommends Delicious but can use something more tart, like Granny Smith or Macintosh
1 Tbsp lemon juice
2 Tbsp brown sugar
2 ribs celery, sliced
1/3 cup mayonnaise
1/2 cup sour cream
Peanuts (optional)--about 1/3 cup more or less


Chill the cooked wild rice. Mix the apples (unpeeled) with lemon juice and brown sugar (keeps apples from turning brown. Add celery and chilled wild rice. Blend mayo and sour cream and mix into the rice mixture. Chill thoroughly, but not longer than about 8 hours. Serve on lettuce leaves. Optionally, you may mix in most of the peanuts just before serving and sprinkle a few on top for a garnish. Looks pretty served on lettuce leaves. This serves about 6 people.
