Fruited Pork Roast

1 boneless pork loin roast
1 lb. (approximately) dried apricots
1/8 tsp. garlic
1/8 tsp. cloves
salt and pepper
apricot jam*
Add 1/4 cup sugar and cook 5 minutes.

Make a horizontal slit in the center of the pork loin from one end to the other. Stuff slit with dried apricots.
Season roast with cloves, garlic, salt and pepper.

Roast at 325 degrees for usual time for pork roast. After first hour, baste with apricot jam or puree every 20 minutes until roast is done.

*Or boil a few dried apricots in 1/2 cup water until they make a puree.
