Banana and Palm Sugar Wontons

2 bananas, thickly sliced
2 Tbl. Lime juice
1/2 c. crumbled palm sugar
20 wonton wrappers
1 Tbl. Cornflour (cornstarch)
2 Tbl. Water
oil for shallow frying
icing (confectioners) sugar and cimnamon


Brush bananas lightly with lime juice and toss them in palm sugar. Place a piece of banana on one half of the wonton wrappers. Brush wonton edges with combined cornflour (cornstarch) and water, fold wonton wrappers to enclose and squeeze edges to seal.

Heat oil in a fry pan until hot. Fry wontons for 1-2 minutes on each side or until they are golden. Drain wontons on absorbent paper. When wontons are cool enough to touch, toss them in icing (confectioners) sugar and cinnamon to coat.

Serve warm with tea. Makes 20
