Banana Cheesecake

1-1/2 lbs cream cheese, softened
3/4 cup sugar
3 eggs
3 cups mashed bananas
2 tsp vanilla

Prepare a 10-inch springform pan by covering with a graham cracker crust.

Preheat oven to 300 degrees F.

In a mixing bowl, combine cream cheese and sugar and beat until light and fluffy.
Add eggs, one at a time, beating well after each addition. Add the remaining ingredients and mix. Pour into the crust.

Bake for 1 hour. Let cool in the oven for 1 hour. Do not open the oven door until cool.
Chill before serving.

Cover the chilled cake with piped-on sweetened whipped cream and sprinkle with sliced toasted almonds or shaved chocolate.
