Banana Pudding
2 cups milk
1/4 cup flour
1/2 cup brown sugar
1 egg
1 or 2 bananas
Heat milk in a double boiler; in meantime, mix flour and sugar in a separate bowl; mix in egg very well; when milk is hot, pour a small amount into the paste and mix very well, then add the paste mixture back into the milk, stirring constantly on the stove until thoroughly mixed, and heat until thickened. When thick, remove from heat, add a blob of butter and about a half tsp of vanilla and a shake of salt. Slice some bananas into individual bowls and pour hot pudding over top to cover. Serve warm or cold.
Note: For date pudding , slice some dates into 4 bowls and cover with hot pudding. For chocolate pudding, use white sugar, not brown, and add 1/4 cup cocoa powder to the dry flour and sugar before mixing in the egg. These recipes can also be made on the stovetop without a double boiler, but you have to heat carefully and stir constantly. They can also be cooked in a microwave oven.
Makes about 4 servings.
