Banana Pudding
1 1/3 c sugar
1/2 c flour
1/2 tsp salt
4 c milk
4 eggs, separated
1 1/2 tsp vanilla
6 ripe bananas, sliced
vanilla wafers
Preheat oven to 425*
Combine the sugar, flour and salt in a double boiler and stir in milk. (I do this directly on the heat, but you have to stand right over it and stir continuously) Stir over boiling water until thickened. Beat egg yolks and gradually stir into hot mixture, cook until mixture is as thick as you want it to be. then take off heat and add vanilla.
Layer a 9x13 pan with vanilla wafers and three sliced bananas add half the pudding, and repeat layers.
Beat egg whites till stiff. gradually adding about 1/4 cup sugar, continue beating till stiff peaks form. pile on top of pudding making sure the whites touch all the sides, or shrinkage may occur. Bake at 425* for about 5 minutes or so till meringue is lightly browned. I find it best served warm... but can be served chilled.
