Banana Bread

Banana Nut Bread

3 cups all-purpose flour
1-1/2 tsp. baking powder
1-1/2 tsp. baking soda
2 cups sugar
1 cup margarine, softened
3 eggs
1-1/4 cups buttermilk
1 tsp. vanilla extract
2 cups mashed, very ripe bananas (about 4 or 5 medium sized bananas)
1 cup chopped walnuts or pecans


Preheat oven to 350 degrees. Grease and flour two 9x5" loaf pans.

In a small bowl, combine flour, baking soda and baking powder; set aside. In a large bowl, cream together margarine and sugar. Add eggs, one at a time, beating well after each addition. Stir in buttermilk and vanilla. Add flour mixture, stirring just until combined. Stir in bananas and nuts until blended. Pour evenly into prepared pans.

Bake for 50 to 60 minutes or until breads test done. Let stand for 5 minutes in pans, then turn out onto wire racks to cool completely. Wrap well and refrigerate overnight. Keep refrigerated.

NOTE: Don't overmash bananas.
