2 1/2 cups All Purpose Flour
1 2/3 cups sugar
1 1/4 teaspoons baking powder
1/2 teaspoon salt
2/3 cup cooking oil
2/3 cup buttermilk or sour milk*
1 1/4 cups banana -- ripe mashed
2 eggs
2/3 cup walnuts -- chopped

Cream Cheese Frosting:
8 ounces cream cheese -- softened
1/2 cup butter or margarine
1 tablespoon vanilla
1 pound powdered sugar -- sifted


Preheat oven to 350° F. Grease and flour a 15 x 10 x 1-inch baking pan.

In a large mixing bowl, combine the all-purpose flour, sugar, baking powder and salt. Make a well in the center of the dry ingredients. Add the cooking oil, buttermilk, mashed banana and eggs. Beat with an electric mixer on low speed till combined; then, beat at medium speed for 1 minute. Fold in walnuts. Spread in prepared baking pan.

Bake in a 350º oven for 30 to 35 minutes or till a toothpick inserted in the center comes out clean. Cool completely.

Prepare Cream Cheese Frosting. Spread over the cooled dessert. Cut into bars. Makes 48.

Cream Cheese Frosting: In a medium mixing bowl with an electric mixer on low speed, Beat together cream cheese, butter and vanilla till smooth. Gradually add powdered sugar, beating the mixture on medium speed till light and fluffy.

*Note: To make sour milk, combine 2 teaspoons lemon juice or vinegar and enough milk to make 2/3 cup. Let stand for 5 minutes before using.
