Cardamom Banana Bread

2/3 cup raisins
1/3 cup dark rum or apple cider
1 cup all-purpose flour
3/4 cup whole wheat flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 tsp. ground cardamom
3 ripe bananas, mashed
1/3 cup canola or corn oil
3/4 cup brown sugar
2 eggs
1/2 cup chopped nuts


Preheat oven to 350 degrees. Grease one 9x5" or 10x4" loaf pan.

In a small saucepan, combine the raisins and the rum. Cook over medium heat until simmering, then remove from the heat and allow to cool 10 minutes.

In a large bowl, mix together the mashed bananas, brown sugar, oil and eggs with an electric mixer for 1 minute. Sift together the white flour, whole wheat flour, baking powder, baking soda, salt and cardamom. Add flour mixture to egg mixture and stir with a spoon until well blended. Stir in nuts and rum soaked raisins.

Pour batter into the prepared pan and bake for 50 to 60 minutes or until a toothpick inserted in middle comes out clean. Allow bread to cool slightly before removing from the pan.
