Banana Cherry Cookies

1 cup vegetable shortening
1 1/2 cups sugar
2 eggs
1 teaspoon vanilla extract
2 3/4 cups all-purpose flour
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1/2 cup buttermilk
1 cup mashed ripe bananas (about 3 medium-sized bananas)
1 cup chopped walnuts
1/2 cup chopped candied cherries


Preheat the oven to 375º F. Coat cookie sheets with non-stick vegetable cooking spray.

Cream the shortening and sugar in a large bowl until light and fluffy. Add the eggs and vanilla; blend well.

In another large bowl, combine the flour, baking soda, and salt. Alternately add the flour mixture, the buttermilk and the mashed bananas to the shortening mixture. Stir in the nuts and candied cherries. (The dough will be soft). Drop by teaspoonfuls onto prepared cookie sheets.

Bake for 8 to 10 minutes or until golden. Cool slightly then remove the cookies to a wire rack to cool completely.

Makes about 7 dozen cookies.
