Chocolate Banana Snack Cake

1 cup rolled oats
1/2 cup butter
1 1/4 cups boiling water
3/4 cup honey
1 tsp. vanilla
3/4 cup (about 2 medium) mashed bananas
2 eggs
1 3/4 cups whole wheat flour
1 1/2 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
1/4 tsp. nutmeg
1/2 cup flaked coconut
1/2 cup chopped walnuts
1 cup semi-sweet chocolate chips


Preheat to 350. Grease and flour a 13x9 pan. In a large bowl, combine rolled oats, butter and boiling water. Let stand 20 minutes

Stir in honey, vanilla, eggs and bananas, blending well. Lightly spoon flour into measuring cup; level off. In a small bowl, combine flour, baking soda, cinnamon, salt, and nutmeg. Mix well. Add dry ingredients to oat mixture and mix by hand until well blended. Fold in coconut, walnuts and chocolate chips. Pour into prepared pan.

Bake for 35 to 40 minutes or until the top springs back when touched lightly in the center.

This cake will not rise high. Serve warm or cool. Makes 15 servings.

High altitude: Above 3500 feet, decrease baking soda to 1 1/4 tsp and bake as directed.
