Banana Crumb Muffins

Amount Measure Ingredient -- Preparation Method

1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3 large ripe bananas
3/4 cup sugar
1 egg, -- lightly beaten
1/3 cup butter or margarine -- melted

Topping:
1/3 cup brown sugar
1 Tablespoon all-purpose flour
1/8 teaspoon cinnamon
1 Tablespoon butter


Preheat oven to 375° F.* and grease or paper-line muffin cups.

In a large bowl, combine dry ingredients. In another bowl, combine bananas, sugar, egg and butter; mix well. Stir into dry ingredients just until moistened. Fill greased or paper-lined muffin cups 3/4 full.

Combine the first three topping ingredients; cut in butter until crumbly. Sprinkle over muffins.

Bake at 375 degrees for 18-20 or until muffins test done. Don't over-bake!

(The original recipe states to bake them at 375 degrees, but I like to bake them at 325 degrees.)

Cool in pan 10 minutes before removing to a wire rack.
