Filet Mignon Stanley
A feature at Brennan's in New Orleans

2 beef tenderloin steaks (about 3/4 lb. each)
2 bananas
2 tblsp. butter
1/2 cup butter
1 tblsp. flour
1 cup milk
1/2 cup prepared horseradish
1/2 tsp. salt
2 drops Worcestershire sauce


Broil steaks on both sides until well browned. Season to taste with salt and pepper.

Meanwhile, peel bananas and halve lengthwise. Saute' on both sides in the 2 tblsp. butter in a skillet (do not overcook). Lift bananas from skillet; keep warm.

Melt the 1/2 cup butter in the skillet; stir in the flour. Pour in milk, cooking and stirring until sauce comes to boiling. Reduce heat and add horseradish, salt, pepper (to taste), and Worcestershire sauce. Cook sauce one minute longer.

Arrange broiled steaks on a platter, surround with bananas, and pour sauce over them.
