Banana Nut Bread

3 cup all-purpose flour
1-1/2 tsp. baking soda
1-1/2 tsp. baking powder
1 tsp. cinnamon OR cardamom
2 cups sugar
1 cup margarine, softened
3 eggs
1 cup buttermilk
1 tsp. vanilla extract
2 cups mashed, ripe banana (about 4 or 5 medium sized bananas)
1 cup chopped walnuts or pecans


Preheat oven to 350 degrees. Grease and flour two 9x5" loaf pans.

In a small bowl, combine flour, baking soda, baking powder and cinnamon OR cardamom.

In a large bowl, cream margarine and sugar. Add eggs, one at a time, beating well after each addition. Stir in buttermilk and vanilla. Add flour mixture, stirring just until combined. Stir in bananas and nuts until blended. Pour evenly into prepared pans.

Bake for 55 to 60 minutes or until breads test done. Let stand 5 minutes then turn out onto wire racks to cool completely. Wrap well and refrigerate for 2 days. Keep refrigerated.

Notes: Don't overmash the bananas. Loaves should be matured before freezing.
