Southern Banana Nut Bread

1/2 c. butter flavored Crisco
1 1/2 c. sugar
2 eggs
1 c. ripe bananas, about 2 medium
1 t. vanilla
2 c. self-rising flour*
1/2 c. buttermilk
3/4 c. chopped pecans

Topping:
1/4-1/3 c. mashed bananas
1 1/4 c. powdered sugar
1 t. lemon juice
additional chopped pecans


In a mixing bowl, cream shortening and sugar; beat in eggs. Blend in bananas and vanilla. Add flour alternately with buttermilk. Fold in pecans. Pour into two greased 8x4x2 in. loaf pans.

Bake at 350 degrees for 45-55 minutes or until a toothpick inserted near the center comes out clean. Cool in pan for ten minutes before removing to a wire rack; cool completely.

For topping: combine bananas, powdered sugar, and lemon juice; spread over loaves. Sprinkle with pecans.

Yield: 2 loaves.

*Note: As a substitiute for each cup of self-rising flour, place 1 1/2 t. baking powder and 1/2 t. salt in a measuring cup; add all purpose flour to equal 1 cup.
