Fresh Blackberry Cobbler
5 cups blackberries
11/2 cups sugar (or Splenda)
1/4 cup butter
3/4 cup water
1 cup all purpose flour**
1 tsp.lemon juice
2 tsp baking powder
1/2 tsp. ground cinnamon
Preheat oven to 350º
In a lg. saucepan, combine berries, water and 3/4 cup of the sugar. Heat until mixture is hot and sugar is dissolved. Remove from heat and add lemon juice.
Melt butter in a 2 quart baking dish.
Combine the flour, baking powder, and the rest of the sugar in a medium mixing bowl, whisk in the milk; add cinnamon.
Pour the batter over the melted butter in the dish. DO NOT stir. Spoon the berries and over the batter adding part or all of the juice. Again DO NOT stir. The batter will rise to the top forming a crust.
Bake 35-40 minutes. Serve with whipped cream or Cool Whip.
Serves about 8-10.
**If using self rising flour omit the baking powder.
