Blueberry Banana Bread- Serves 10

1-3/4 cups all-purpose flour
2 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp. salt
1/3 cup margarine, softened
2/3 cup sugar
2 eggs
1 cup mashed ripe banana (about 2 large)
1 cup wild blueberries


Preheat oven to 350 degrees. Grease and flour an 8-1/2 x 4-1/2" loaf pan.

In a small bowl, sift together flour, baking powder, baking soda and salt. Set aside. In a large bowl, cream together margarine and sugar until light and fluffy. Beat in eggs, one at a time until well blended. Add half of the flour mixture; mix well. Add half of the banana; stir gently until combined. Add remaining flour mixture; mix well. Add remaining banana; stir gently just until combined. Gently fold in blueberries.

Pour into prepared pan and bake for 1 hour or until cake tests done. Let stand in pan for 5 minutes. Turn out onto wire rack to cool completely. Wrap well refrigerate overnight.
