Blueberry Salad
1st layer:
1 (4 serving size) box red raspberry Jello
2 cups hot water
2nd layer:
1 envelope plain gelatin
1/2 cup cold water
1 cup cream or evaporated milk
3/4 cup sugar
1 teaspoon vanilla
8 ounces cream cheese
1/2 cup chopped nuts
lemon extract or lemon juice to taste.
3rd layer:
1 (4 serving size) box red raspberry Jello
1 cup hot water
1 can blueberries
Dissolve raspberry Jello in hot water in a 9 x 13 inch dish; let set.
Dissolve plain gelatin in cold water. Heat cream and sugar, without boiling. Mix into gelatin mixture. Add vanilla, cream cheese, nuts and lemon juice. Pour over first layer and let set.
Dissolve red raspberry Jello in water; add blueberries. Pour over second layer; let set.
