Blueberry Pecan Bread
(1 large or 2 small loaves)

1 cup washed blueberries, patted dry
1 3/4 cups all-purpose flour
2/3 cup sugar
1 1/2 tsp. baking powder
1/2 tsp. each baking soda and salt
Juice and grated rind of 1 orange
2 Tbs. butter, room temperature
1/2 cup boiling water, approximately
1 cup chopped pecans
1/4 cup flour


Use 1 large (9 x 5) pan, greased or Teflon, or two small (7 1/2 x 3 1/3) pans. If glass, reduce oven heat by 25 degrees. Line pans with buttered wax paper.

Preheat oven to 350 degrees. Wash and dry blueberries.

In a large bowl, sift together flour, sugar, baking powder, baking soda and salt. In a measuring cup, pour the juice and grated rind of 1 orange, and add butter. Add boiling water sufficient to make 3/4 cup. Stir this liquid into the dry ingredients, blending well.

In a separate bowl, combine the berries, chopped pecans, and 1/4 cup sifted flour. Add to the batter, taking care not to mash the berries. Pour batter into pan(s). Place the pans in the oven and bake until the bread tests done when a wooden toothpick inserted in the loaf comes out clean and dry. Remove bread from oven. Turn the pan on its side, carefully pull the loaf out by gently tugging on the wax paper lining. Cool on metal rack.
