Candied Citrus Peel

May be grated for zest or used in cakes, breads, and desserts, and keep about 3 months

2 cups grapefruit, orange, line or lemon peel
1-1/2 cups cold water


Grate fruit slightly to release oil from cells. Cut into thin strips and place in heavy pan. Cover with water. Bring slowly to the boiling point and simmer 10 minutes or longer if you do not like a rather bitter taste. Drain. Repeat process 3 to 5 times in all, draining well each time.

Then, for each cup of peel. make a syrup of:
1/4 cup water
1/2 cup sugar


Add peel and boil until all syrup is absorbed and the peel is transparent. Roll it in powdered (10X) sugar and spread on racks to dry. Store tightly covered.
