Candied Orange Peel

Dip in Chocolate for a real treat.

  Candied Orange Peel
  
  3 medium oranges 
  4 cups cold water 
  1 tablespoon salt 
  2 cups sugar 
  1/2 cup water 

  Cut peel of each orange into fourths. Loosen pulp with bowl of spoon. Add
  salt to the four cups of water, add peel; weight with a plate to keep peel
  under water. Let stand overnight.

  Drain and wash thoroughly. Cover with cold water, heat to boiling, drain.
  Repeat 3 times. This helps to remove the bitter taste. 

  With kitchen scissors cut peel in strips. Cut some with tiny cookie cutters.
  In saucepan, combine 2 cups cut peel, sugar and 1/2 cup water. Cook and
  stir until sugar dissolves. Cook slowly until peel is translucent. Drain 
  thoroughly. Roll in additional sugar. Dry on rack. Store in covered container.
