Dried Cherry Cream Cheese Spread
1 cup rehydrated cherries (see Archives, Fruit, for Dried Cherries)
1/2 cup Amaretto or Grand Marnier liqueur
16 ounces cream cheese
1 tbs sugar (or more to taste)
1 cup toasted chopped almonds
Cover and rehydrate cherries with liqueur and refrigerate for 24 hours. Drain.
Beat cream cheese until fluffy; add sugar and cherries. Taste and adjust sweetness to your personal taste. Chill mixture and form into a ball. Cover ball with almonds (or mix into cream cheese mixture). Serve with plain crackers.
