Black Forest Cheesecake

1 1/4 Cups (300 ml) graham wafer crumbs
1/3 cup ( 75 ml) Shortening, melted
1/4 cup ( 50 ml) Granulated sugar
3 (8 oz. pkgs) (250 g) Cream cheese, softened
1 (14 oz) can Sweetened Condensed Milk
8 Squares Semi Sweet Chocolate squares (melted and cooled)
4 Eggs
2 tsp. Vanilla
1 (19 oz) can of Cherry Pie Filling, chilled

Combine crumbs, shortening and sugar, press firmly on bottom of 9" springform pan.

In large mixer bowl, beat cheese until fluffy. Gradually beat in sweetened condensed milk, chocolate, eggs and vanilla until smooth. Pour into prepared pan.

Bake at 300 F (150 C) for 65 minutes or until cake springs back when lightly touched. Cool; chill.

When serving top with a good dollop of cherry pie filing and garnish with whipped cream and chocolate curls.
