Cherry Coffee Cake

1 egg and enough milk to measure 1 cup
1/2 cup margarine, softened
1 cup flour
2 teaspoons baking powder
1/2 teaspoon salt
1-21 ounce can cherry pie filling*
1/2 teaspoon cinnamon


Preheat oven to 350 degrees.

Blend the first 5 ingredients with a mixer. Pour into a 13x9x2 inch greased baking pan.

Mix the cinnamon into the pie filling. Gently spread pie filling over the cake mixture. Bake for 55 minutes.

*You can use different fillings and flavorings: cherry pie filling and 1/2 teaspoon almond extract, apple pie filling and 1 tablespoon cinnamon, strawberry pie filling and 1/2 teaspoon vanilla extract, blueberry pie filling and 1/2 teaspoon vanilla extract, blackberry pie filling and 1/2 teaspoon rum extract, raspberry pie filling and 1 tablespoon chocolate liquor, pineapple pie filling and 1/2 teaspoon coconut extract or 1/2 teaspoon grand marnier.
