Covered Cherry Cookies 
maraschino cherries (save juice) 
1 cup shortening 
2/3 cup sugar 
1 egg 
2 1/2 cup flour 
3/4 tsp. baking powder 
1/4 tsp. salt 
1 tsp. vanilla 
powdered sugar 
coconut 
Preheat oven to 350 degrees F.
Cream together shortening, sugar and egg. Add dry ingredients and vanilla. Wrap about 1 teaspoon dough around cherry until covered. Bake at 350 degrees for 12 to 15 minutes until light brown. 
Glaze: Powdered sugar and cherry juice to make thin icing. Dip top of hot cookies in icing then in coconut. 
Makes 80 to 90 cookies.
