Cherry Walnut Holiday Cake
1 pkg. (8 oz.)cream cheese
1 cup butter
1 1/2 cup sugar
1 1/2 teaspoon vanilla
4 eggs
2 1/4 c. flour
1 1/2 teaspoon baking powder
1 (8 oz.) jar maraschino cherries, drained
1/2 cup chopped nuts
confectioners sugar for glaze
Preheat oven to 325° F. and grease and flour a tube pan.
Blend cheese, butter, sugar and vanilla. Add eggs, one by one, mixing well. Gradually add 2 cups flour and baking powder.
Combine the other 1/4 cup flour with cherries and nuts. Fold into batter.
Pour mixture into greased and floured tube pan. Bake at 325 degrees for about an hour.
Make a medium thickness of glaze with confectioners' sugar, water and almond flavoring--drizzle over top of cooled cake and let it drip down sides. To garnish, cut up red and green maraschino cherries to look like clusters of berries and leaves. Serves 12
