Fresh Italian Prunes in Port

1 1/2 pounds Italian prunes
2 cups sugar
2 cups port
Pinch ground allspice
Pinch ground cloves
Vanilla Ice Cream


Cut the prunes lengthwise with a paring knife around the pit. Twist the halves apart and remove the pit. Cut the prunes lengthwise into quarters.

Combine the sugar and port in a medium saucepan. Bring to a boil. Add the spices and prunes and bring back to a boil. Lower the heat and simmer until the prunes are tender, about 15 minutes. Lift the prunes with a slotted spoon out of the poaching liquid and place in a bowl.

Boil the remaining liquid over high heat until it thickens slightly and reduces by one-quarter. Pour the liquid over the prunes and chill.

Serve as a compote or over ice cream. Serves 6
