Cranberry Apple Cake

2 cups flour
1 teaspoon each baking soda, salt, cinnamon and nutmeg
1 3/4 cups brown sugar
1/2 cup oil
2 eggs
1 teaspoon vanilla
2 cups cranberries
2 cups chopped apples (no need to peel)
1 cup chopped walnuts

Preheat oven to 350 F.

Mix brown sugar, oil, eggs, and vanilla, add dry ingredients. Stir in fruits and nuts.

Bake in greased and floured bundt pan at 350 degrees for 1 1/2 hours.

Dust with confectioner's sugar, or gild the lily with a lemon glaze. This freezes well.
