Cranberry Nut Bread

1 cup fresh or frozen cranberries{chopped coarsely}
1/2 cup chopped nuts
1 Tbls. orange zest
2 cups flour
1 cup sugar
1-1/2 tsp baking powder
1 ts salt
1/2 ts baking soda
2 Tbls shortening
3/4 cup orange juice
1 egg, well beaten


In a bowl mix flour, sugar, baking powder, soda and salt, cut in shortening. Stir in juice, egg and zest, mix just till moistened. Fold in cranberries and nuts. pour into greased and floured 9x5x3 loaf pan and bake at 350 for about 60 minutes. {or until the toothpick test works} Cool in pan for 15 min. before turning on it's side on a rack to cool completely. Wrap in plastic and allow to sit overnight.
