Cranberry Nut Bread with Fresh Cranberry Relish

For Bread:
2 cups flour
1 cup sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 cup vegetable shortening
1 egg, beaten well
1 cup cranberry relish
1/2 cup chopped nuts

For Relish:
1 large bag (4 cups) cranberries
2 tart cooking apples, seeded but not peeled
2 oranges, seeded but not peeled
1 cup sugar


For bread: Sift together dry ingredients (flour, sugar, baking powder, baking soda and salt). Cut in shortening with fork or pastry knife.

Combine egg with relish and add to dry ingredients. Mix just enough to moisten. Stir in nuts. Pour batter into greased and floured loaf pan.

Bake at 350 degrees for about 45 minutes or until wooden tester comes out clean.

For relish: In blender or food processor, grind together cranberries, apples and oranges, being careful to
leave mixture a little chunky. Add sugar. Place in covered container and refrigerate until chilled. Yield: 1 loaf.
